Ingredients

  • 2 Garlic heads
  • 2 tbsp Olive oil
  • 8 oz Cream cheese, softened
  • 1 cup Sour cream
  • 1/3 cup Mayonnaise
  • 1 tbsp Lemon juice
  • 1 tsp Worcestershire sauce
  • 1/4 cup Chives, finely sliced
  • 2 tbsp Parsley, chopped
  • 1 tbsp Fresh dill, chopped
  • 1 tsp Onion powder
  • 3/4 tsp Kosher salt
  • 1/2 tsp Black pepper
  • For serving Potato chips, crackers, and cut vegetables

Instructions

  1. Heat the oven to 400 F. Slice the very top off each garlic head to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 35 to 40 minutes until deeply soft and sweet.

  2. Let the garlic cool until you can handle it, then squeeze the roasted cloves into a bowl. Mash them with a fork into a paste, removing any papery bits.

  3. Beat the cream cheese until smooth. Add sour cream, mayonnaise, lemon juice, Worcestershire, onion powder, salt, and pepper, then mix until creamy and no lumps remain.

  4. Fold in the roasted garlic paste, chives, parsley, and dill. Taste and adjust with more lemon or salt if the dip needs brightness.

  5. Cover and chill for at least 1 hour. The rest time matters: the garlic mellows, the herbs perfume the base, and the texture gets scoopable.

  6. Before serving, stir once, spoon into a shallow bowl, and top with extra herbs, black pepper, and a tiny drizzle of olive oil. Serve with chips, crackers, and vegetables.
