Oreo Celebration Cake
A tender two-layer chocolate cake folded with crushed Oreos, filled with cookies-and-cream frosting, and finished with dramatic cookie crumbs.

Ingredients
- 1 3/4 cups All-purpose flour
- 1 3/4 cups Granulated sugar
- 3/4 cup Unsweetened cocoa powder
- 2 tsp Baking powder
- 1 tsp Baking soda
- 1 tsp Fine salt
- 2 Large eggs
- 1 cup Buttermilk
- 1/2 cup Neutral oil
- 2 tsp Vanilla extract
- 1 cup Hot coffee or hot water
- 18 cookies Oreos, roughly crushed
- 1 cup Unsalted butter, softened
- 8 oz Cream cheese, softened
- 4 cups Powdered sugar
- 2-4 tbsp Heavy cream
- 1 tsp Vanilla extract
- 1/4 tsp Fine salt
- 12 cookies Oreos, finely crushed
- 8 cookies Oreos, halved or crushed

Heat the oven to 350 F. Grease two 8-inch round cake pans, line the bottoms with parchment, then dust the sides lightly with cocoa powder so the cake releases cleanly without leaving white flour marks.

Whisk the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl until the cocoa is evenly distributed and no pale streaks remain.

Add the eggs, buttermilk, oil, and vanilla. Mix on medium speed for about 2 minutes, scraping the bowl once. The batter should look glossy and thick before the hot liquid goes in.

Slowly stream in the hot coffee or water while mixing on low. The batter will become loose; that is correct. Fold in the roughly crushed Oreos by hand so they stay in visible pieces.

Divide the batter evenly between the pans and bake for 28 to 32 minutes, until the centers spring back and a toothpick comes out with a few moist crumbs. Cool in the pans for 15 minutes, then turn out onto a rack and cool completely.

Beat the butter and cream cheese until smooth and fluffy, about 3 minutes. Add powdered sugar, vanilla, salt, and 2 tablespoons cream. Beat until light, adding more cream a tablespoon at a time if the frosting feels too stiff.

Fold the finely crushed Oreos into the frosting. Level the cooled cake layers if needed, then place the first layer on a plate and spread about 1 cup frosting over the top.

Add the second cake layer, cover the top and sides with a thin crumb coat, and chill for 20 minutes. Finish with the remaining frosting, pressing Oreo crumbs around the sides and decorating the top with halved cookies.
